Flake Ice for Tampa Sushi & Raw Bars: Sizing, Brands, Lease
March 2026 · 7 min read
Sushi and raw bar programs have one ice machine question that matters: how much flake can you produce, and how cleanly. Cube ice damages fish. Bagged ice introduces contamination risk. The right answer is an on-site, dedicated flake machine sized to your display and prep cases.
Why flake, not cube
Flake ice molds to the contour of fish without crushing it, maintains a wet-cold seal that slows oxidation, and drains cleanly. Cube ice creates pressure points that bruise flesh and looks unfinished in a display case. Every reputable sushi program in Westshore, Hyde Park, and St Pete runs flake.
Food safety in raw bar service
- • Dedicated scoops, never shared with prep or service stations
- • Ice in contact with raw fish is single-use — once it's drained off, it's discarded
- • Display case temperature held below 41°F at all times, ice refresh per shift
- • The flake machine itself is on the same DBPR inspection cycle as the rest of the kitchen — sanitize on schedule
Sizing for a sushi case plus raw bar combo
Tampa Bay sushi operations we work with typically need:
- • Small omakase counter (8-12 seats): 150-300 lb/day flake
- • Full-service sushi restaurant (40-80 seats): 400-700 lb/day
- • Sushi plus raw bar with oysters and crudo: 700-1,200 lb/day
- • Resort-style seafood operation: 1,500+ lb/day, often two machines
Bin sizing usually exceeds production rate at the high end — you stage ice during morning prep and run on bin volume through dinner.
Brands we lease for raw service
Two product lines dominate in Tampa Bay sushi kitchens: Hoshizaki F-series and Manitowoc QuietQube flake. Both produce dry, low-temp flake at predictable rates. Differences are mostly footprint, water connection, and condenser style (air vs water cooled). On a lease, the choice usually comes down to what fits the kitchen footprint and the available drain.
Why lease vs buy for a sushi program
Flake machines run hard. Continuous-duty production, often in tight kitchens with marginal ventilation. Owned machines run 4-7 years on average before a major rebuild. On a Crystal Ice lease, repairs, descaling, and eventual replacement are included for a flat monthly rate.
